Capo Caccia cheese of the week is peretta. Tasters available on the stall. Peretta is a spun soft compact cow’s milk cheese with milk from animals raised in free stabling. The characteristic shape is a typical “pear” with a head and has a golden, glossy, thin smooth pale yellow rind and a straw-coloured. The paste is elastic and uniform with a sweet and delicate buttery flavour and lactic aroma.

Our Peretta comes from Pattada where the mountain pastures are rich in vitamins and beta carotene and all those enriching healthy ingredients are absorbed within the milk made by their free range cows.  It can be eat fresh or roasted, accompanied with vegetables, seasoned with honey or melted in a warm soup like Zuppa Gallurese, a thick bread soup.”

Wine

Natural wines – Wine Scouts   Organic and biodynamic wines from around the globe.  Samples always offered by Pedro, who is a font of wine knowledge.  He says “Hello! This Saturday I will open a pure, natural red wine from Côte du Forez in the Loire Valley, France. La Volcanique from Cave Verdier-Logel has a convincing lick of black fruits on the nose, especially dried blackcurrants, and nuances of morello cherries, laced with hints of juniper and bay. The palate feels sweet and ripe, set against a dry concentration rather than anything confected or too flashy. It feels full, savoury and beautifully tense, and is full of juicy, pebbly fruit. Côte du Forez is a new appellation in the eastern Loire, located in the Auvergne. Verdier-Logel’s “Volcanique,” named for the volcanic soils of the region, is 100% Gamay. Fresh, lean, delicious. Come taste!”
